Rain and Coffee

The only thing better then rain and coffee is having Josh with me enjoying it!

This past week Josh and I have been through a roller coaster of feelings...
Thankfully, our Family and Friends have been amazing.

Thank you - Everyone who has been there for us.

We know everything will heal in its own time, and we are awaiting that with open arms.

****

We would also like to say Congratulations to our very great friends Nicole and Justin on the arrival of their beautiful baby girl Hannah Mae. We are so very happy for you.

No Longer...

Josh and I are no longer children.

Over the past few years we have repeatidly said, "When did we become adults, and how do we stop it?" to each other. I believe this is also a line Meredith said in one episode of Grey's Anatomy.

I graduate from my undergrad 5 years ago this month. 5 years.

That seems crazy to me. After I graduated, Josh and I moved into our first apartment. This lasted about a year and a half, low rent and a ton of social time. We loved it. After a short period of time we bought our first house, the one that we are still in. We closed December 29th, 2006.

We realized that this was going to be a large responsibility, and we thought we were ready for it. Then we got to the point where we had lawn envy... If you have had lawn envy, you most likely thought, I never thought that this would be something that we would have ever considered. Part of becoming an adult, and responsible for taking care of your own things.

We love our house, we love our neighborhood. We have become adults.

We have been through the ringer, battles coming whenever we felt 'safe'. Random things, that right now seem so trivial.

Yesterday, the world got taken out from under our feet.

We are coping, yet I for sure, and most likely Josh too, are realizing that we are adults and we can make it through anything.

I am now proud that I am an adult. Josh and I are able to survive.

Great Sunday Time

Yesterday Josh and I had a wonderful day! We were lucky to both have the day off of work and were able to enjoy a whole day doing what we wanted to!
We started off the morning with some coffee, Josh regular, me decaf. A bit of cereal and discussion on what we wanted to do for the day.. then we went to the St. Paul Farmers Market!

I prefer the St. Paul Farmers Market in terms of size, and amount of people that attend. The isle's are larger and the vendors less. It makes it much more simple to navigate.
And I am not one for crowds.
Two new cups of coffee, and some wonderful brown farm eggs and thick cut bacon from my Mother's side Family Farm (Bar 5), and then some Foccocia bread rolls, were were ready to go home. I fell off the Vegan wagon. Shoot.

Josh went to town and made wonderful Egg, Bacon, and Cheese foccocia breakfast sandwiches!

Part of the Vegan lifestyle that I am choosing to live is from the treatment or lack of treatment of the farm animals. I decided that if I were to fall off the wagon every now and again, I would be okay with it if the product came from a more appropriate farm, versus a huge production farm.

The remainder of the day Josh and I did a whole lot of nothing, along with a whole lot of hanging out. We just enjoyed the day we had, and enjoyed the weather! I hope we have a lot more of these Sundays over these summer months!

(Back to the Vegan lifestyle as of today!)

Vegan Red Velvet Cake with Buttercream Frosting

Since I have become vegan, I realized that I haven't had any sweets. While this is good and fine for the most part, after a good two months I am really craving something sweet! I am not the best baker, definitely a better cook... so I needed something simple.

Since I have never baked a cake from scratch before I thought 'No Problem' what is so hard when it comes to baking from scratch?! Well, I discovered that it really wasn't that hard at all and the ingredients were pretty common.

I found the recipe online and went to town. One change I made was to make this cake into cupcakes... they turned out great! This recipe is amazing!

Baking...

Vegan Baking is something I haven't attempted until now... hopefully the Vegan Red Velvet Cake with Buttercream frosting will turn out amazing and give me that sweet fix I am craving!

Updates to come when it is completed!

Chi Chi

Our neighborhood cat, Chi Chi, is annoying me.
Everyday for the past couple of weeks he has woken me up too early in the morning begging our neighbors to let him in the house. Mind you, he has never been 'let it' - he has snuck in on one or two occasions, but never 'let in'. I don't understand why he thinks he can go in?!?

The hard part is I feel bad for this stray cat and I can't bring myself to call animal control to pick him up. I believe he is a fairly young cat as he seems small for being a male, so it would be best to give him a chance to be with a family. But what if he doesn't get picked and they run out of room?

I can't sentence a cat to that. I may have to have Josh step in and make the call tonight. Especially since it is supposed to snow over night tonight. I just don't want to be the one to make the call.

The other problem is that he is the one picking fights with other neighborhood cats (the ones who have a home at night) so it is hard, because I feel like when I am home I am constantly separating him from the other cats. And the two a.m. wake up calls where all the cats are fighting are not pleasant at all... I have to remember that when I am getting emotional.

Update: Chi Chi went to the vet and then Humane Society Saturday morning at 6:45am.

M-T-W---only?

This week is taking forever to be over. I don't need it to be done, but it just feels as if everyday could be broken into two normal days...

Yesterday at Lacrosse practice the young ladies asked if they could do Yoga for practice. I finally gave in. They made their yoga session last only 10 minutes when I told them they could do it for the rest of practice.
So then they ran.

I am looking forward to tonight where Josh and I can hang out, make an awesome dinner and consider going to the gym. I love when we have time to hang out!

Happy Hump Day!

All around updates!

House for Sale:
The house has had very little to no activity. We have had three open houses, and the last one was a flop. No one showed. At this point we have decided that we will not have another open house for at least two weekends or three full weeks. We would like to enjoy our Sunday's again. We are still hopeful, but we are losing our optimism. BUT our house is exceptionally clean! ;)
Lacrosse 2010:
3-2-1
My B-Squad team is over half way done with their 2010 season.
I am not sure if they realize this or not.
Our record is okay, I would prefer it to be better, but I guess more wins then losses should be a good sign. I guess the thing I am the most proud of is the sportsmanship my ladies are showing at the games. They have held their heads high and been able to rise above really 'yucky' situations. I am proud that they are able to keep events in perspective and not lose their cool.
Job Status:
I am subbing on a consistant basis, but no 'real' job at this point! I have been applying towards the few jobs that have been posted - but nothing for next year. I did get the Senior Playground Leader position for the summer through our local parks and recreation program. I am excited for that. It will be Noon to Five all summer. The kids will be younger then I am used to dealing with in the schools but I think that will help with my understanding of how the students develop mentally!
Tires Plus:
Josh has been working his butt off to make things work at Tires Plus. They finally got a 'new' salesperson for some relief on the three current salespeople. Josh will finally start getting a day or two off from work! He really needs that!
Josh and his store are doing very well, and he is succeeding in his new Service Manager position!
Neighborhood Cat:
We have a neighborhood cat that showed up a couple of weeks ago trying to take our Saturday night cookout food. Josh and I fed it (because there is no way I can watch anything living starve) and he has taken to hanging out with our neighbors and us. One of the neighbor kids named the cat Chi-Chi. He looks just like my family cat growing up. I wish I wasn't SO allergic to cats otherwise Bandit would have a new brother... I really don't want to think about this cat once fall and winter come.
Linder's:
I started at Linder's this past weekend. I worked a total of seven hours and I can't believe how easy your body can hurt after only seven hours of standing in one place. The seven hours weren't even in a row! I work again on Saturday morning, and I am happy I get a week before I go back!
I think that is all for now! This week is a somewhat easy week for me, as I get to have dinner with friends both tonight and tomorrow. I have three lacross games that are Thursday, Friday, and Saturday... Have a good week everyone!
